Hey! I like that pretentious bullshit!
But yeah, stuff like GY!BE, Mono and Set Fire to Flames are Far harder to enjoy than stuff like GIAA, Slint and 65daysofstatic.
Also, the term post-rock was used for bands like Slint and Tortoise back in 1991... so, not a recent term. Of course, along with every other band labelled as that, they hated the term. It's rock with the same instrumentation, but the structure is Far different from regular rock (hence post-). The riffs, unlike regular rock, are used as Textures (also known as atmospheric effects).
For example, this band in terms of regular rock have very weak riffs, but in terms of the atmosphere, they are very good.

Opeth isn't post-rock in the slightest, what the fuck? They're basically a prog-death band that evolved into a weird prog band. I hear no post rock anywhere.
and @Merc: i'll admit a bit of ignorance on the whole "post-rock" term thing, I've only read about it in bits and pieces from interviews. Maybe I was thinking that GIAA per se weren't called post-rock until later, not the whole genre, my bad. Still, the term can get vague as hell.
@pavel: I could see you disliking this stuff, you're more of a raw oldschool guy and post-rock's pretty modern and gay. No problem
If you are a false, don't entry, or you'll be burned and died!

You didnt understand, or maybe i didnt explain myself well enough. I was referring to epic songs that are long yet they seem rather short. Like The Grand Conjuration is rather long, bit over 10 mins, yet to me it feels like a 4 min masterpiece. Yet that long arse post rock feels longer than, say 20mins.
