Probably too late to help, but figured I'd add this. These are my Baba's recipes (she grew up in Russia, emigrated after WW2).
The one Down
side is that most of these take at least 2 hours to make. Simple techniques on the whole, but time consuming. Hope this helps.
I make this monthly, takes about 2 hours total.
The Borscht might be easier - still takes some time, but IMHO harder to Screw
up. This isn't the vinegary version most people associate with the word, and all my friends like it.
And if you're feeling adventurous (though I suspect the desserts aren't Russian)
